Slow Cooker Balsamic BBQ Pulled Pork with Smoked Olive Oil

Slow Cooker Balsamic BBQ Pulled Pork with Smoked Olive Oil

This Crocktober version of balsamic BBQ pulled pork pairs pork shoulder with a tangy tomato sauce, our 18-Year Traditional Dark Balsamic Vinegar and our Olive Wood Smoked Infused Olive Oil. The slow cooker takes care of the tender meat, and a short simmer on the stove gives the cooking juices a thicker barbecue finish. Pile it onto buns, spoon it over baked potatoes or serve it over rice with a crunchy slaw.

Serves 8. Prep: 20 minutes. Cook: 8–10 hours on LOW, plus 15–20 minutes for the sauce.

  1. Cut the pork into 3–4 large pieces and season with salt and pepper. Heat the oil in a skillet over medium-high heat and brown the pork on all sides.
  2. Put the onion in a 6-quart slow cooker and place the pork on top.
  3. Whisk the balsamic, ketchup, broth, brown sugar, mustard, Worcestershire, garlic and paprika together. Pour over the pork.
  4. Cover and cook on LOW for 8–10 hours, until the pork shreds easily with two forks.
  5. Transfer the pork to a board and shred, discarding excess fat. Skim fat from the cooking liquid, transfer the liquid to a saucepan and simmer 15–20 minutes, stirring, until it coats a spoon.
  6. Return the pork to the slow cooker and stir in enough sauce to coat generously. Serve with the remaining sauce on the side.

Nutrition excludes buns and other serving accompaniments. This Traditional Balsamic version is a separate variation on our original Red Apple Balsamic pulled pork.
