Gluten-Free Gnocchi con Olio
Soft potato gnocchi, good olive oil, Parmesan and a few simple seasonings are all you need for this easy Italian-inspired dish. Our Garlic Infused Olive Oil creates a savory garlic-rich coating without the need for a heavy sauce, making this gluten-free gnocchi an easy weeknight dinner, side dish or appetizer.
I N G R E D I E N T S :
- 1 lb gluten-free potato gnocchi
- ¼ cup Rocky Mountain Olive Oil Company Garlic Infused Olive Oil, plus more for finishing
- ⅓ cup freshly grated Parmesan cheese
- ½ teaspoon kosher or sea salt, or to taste
- ¼ teaspoon freshly ground black pepper
- 1–2 tablespoons reserved gnocchi cooking water, as needed
- Fresh thyme or Italian parsley, roughly chopped, for finishing
- Extra Parmesan for serving
I N S T R U C T I O N S :
- Bring a large pot of salted water to a gentle boil. Cook the gluten-free gnocchi according to the package directions, usually until the gnocchi float to the surface and are tender.
- Before draining, reserve about ¼ cup of the cooking water. Drain the gnocchi gently.
- Return the warm gnocchi to the pot or transfer them to a large skillet over low heat. Add the Garlic Infused Olive Oil and toss gently until every piece is lightly coated.
- Add the Parmesan, salt and black pepper. Toss again, adding a tablespoon or two of reserved cooking water if needed to help the Parmesan and olive oil form a light, silky coating around the gnocchi.
- Spoon onto a serving platter or individual plates. Finish with another small drizzle of Garlic Infused Olive Oil, freshly grated Parmesan and a scattering of fresh thyme or parsley.
- Serve immediately while warm.
