Greek Quinoa Salad with Cucumber Lemon Dressing
This quinoa salad is a harmonious blend of nutty quinoa, crisp cucumber, and sweet bell pepper. The dressing, made from our Lemon Olive Oil and Cucumber Balsamic, provides a refreshing, tangy zing, complemented by the freshness of parsley and our Greek Seasoning.

- Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until the water is absorbed and the quinoa is tender. Fluff with a fork and let cool.
- In a large bowl, combine the cooled quinoa, cucumber, red bell pepper, red onion, and parsley.
- In a small bowl, whisk together the Lemon Olive Oil, Cucumber Balsamic and Greek Seasoning.
- Pour the dressing over the quinoa salad and toss to combine.
- Top with feta crumbles, if desired, and serve chilled or at room temperature.
