Rosemary Chicken Bacon Skewers
These Rosemary Chicken Bacon Skewers are tender, juicy and deeply flavorful - a huge hit at any BBQ. And they're so simple to prepare with just chunks of chicken breast, bacon, Rosemary Olive Oil, garlic, fresh rosemary, lemon and Italian Seasoning. Put the skewers on the grill, cook some asparagus and quinoa while the skewers are cooking and - BAM! - in 20 minutes you'll be serving dinner!
- 4-5 small chicken breasts
- 12 rosemary stems with leaves
- 12 thin bacon slices
- 1/2 cup Rocky Mountain Olive Oil Rosemary Infused Olive Oil
- 2 cloves of minced garlic
- 1 Tbsp Grind Spice Co Italian Seasoning Blend
- juice of 1/2 a lemon
Remove the rosemary leaves from the stems and bash the rosemary leaves with a mortar & pestle.
Take a strip of raw bacon and push the Rosemary skewer through the bottom end then add a marinated chicken piece and then continue to weave the bacon over and under more pieces of chicken tightly leaving one inch at the top and bottom.
Grill or broil until the chicken is cooked through and the bacon is crispy.
Serve with Caesar salad or quinoa and grilled asparagus.
