Slow cooker beef and bean chili with a light hot honey finish.

Slow Cooker Chili with Hot Honey

Slow Cooker Chili with Hot Honey

A small drizzle of hot honey gives slow cooker chili a sweet-spicy finish that works with the tomatoes, beans and smoky seasoning. This version uses our Olive Wood Smoked Infused Olive Oil to brown the beef and keeps Jalapeño Hot Honey at the table so everyone can choose their own heat level. Serve it with cornbread or a baked potato when you want a dinner that feeds a hungry crowd.

Serves 8. Prep: 20 minutes. Cook: 6–8 hours on LOW.

I N G R E D I E N T S :

  • 1½ lb lean ground beef (90% lean)
  • 1 tablespoon Rocky Mountain Olive Oil Olive Wood Smoked Infused Olive Oil
  • 1 large yellow onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup reduced-sodium beef broth
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon kosher salt, plus more to taste
  • ½ teaspoon black pepper
  • 8 teaspoons Grind Spice Co Jalapeño Hot Honey, for serving

I N S T R U C T I O N S :

  1. Heat the oil in a large skillet over medium heat. Add the beef and onion and cook, breaking up the meat, until the beef is browned and no pink remains. Drain excess fat if needed.
  2. Transfer to a 6-quart slow cooker. Add the bell pepper, garlic, tomatoes, canned beans, broth and seasonings, then stir.
  3. Cover and cook on LOW for 6–8 hours, until the vegetables are tender and the flavors have blended.
  4. Stir well and adjust the seasoning. If you prefer thicker chili, simmer a portion in a saucepan to reduce, then stir it back in.
  5. Serve in bowls with about 1 teaspoon hot honey per portion, or let everyone add their own. Offer grated cheese or sour cream separately if desired.

Nutrition includes 1 teaspoon hot honey per serving and excludes optional toppings. Use canned kidney beans; do not substitute raw dried kidney beans.
