Summer Veggie Side Salad
Summer. Is. HERE! And what better way to ring in the beginning of summer than with fresh veggies tossed in oregano olive oil and crisp, premium, white balsamic. A very basic, but healthy side that goes with anything and gets extra bonus points if the veggies are garden-fresh.
- 1 cup of chickpeas
- 15 cherry tomatoes, halved
- ½ of an English cucumber, diced
- 2 bell peppers, diced
- 1/8 cup minced purple onion
- ¼ cup premium white balsamic vinegar
- 1/8 cup Oregano olive oil
- ¼ cup chopped cilantro
- Salt & Pepper, to taste
- Fresh radish to garnish
Combine all vegetables and the chickpeas in a large bowl. Drizzle with oregano olive oil, premium white balsamic vinegar, add fresh cilantro, salt and pepper. Toss vigorously, let sit for 2 minutes, garnish with radishes and serve!
