Lemon Cucumber Grilled Chicken
Tender grilled chicken breasts are infused with the bright, citrusy notes of our Lemon Fused Olive Oil and the cool, tangy essence of our Cucumber Balsamic Vinegar. Fresh dill and garlic add aromatic depth, making this dish a flavorful delight to eat on warm patio nights.
I N G R E D I E N T S :
4 boneless, skinless chicken breasts
3 tablespoons Rocky Mountain Olive Oil Lemon Fused Olive Oil
3 tablespoons Rocky Mountain Olive Oil Cucumber Balsamic Vinegar
2 cloves garlic, minced
1 tablespoon fresh dill, chopped
1 tablespoon Grind Spice Co Lemon Pepper
salt and pepper to taste
I N S T R U C T I O N S :
1. In a small bowl, whisk together the Lemon Olive Oil, Cucumber Balsamic, minced garlic, fresh dill and Lemon Pepper.
2. Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
3. Preheat your grill to medium-high heat.
4. Remove the chicken from the marinade and grill for 6-8 minutes per side, or until the chicken is cooked through and has nice grill marks.
5. Let the chicken rest for a few minutes before serving. Enjoy with a side of grilled vegetables or a fresh salad.
