Chicken thighs are browned first, then flour is cooked directly into the olive oil and pan drippings before adding stock, onion, garlic and Creole seasoning.

- Season the chicken and brown it in olive oil in a heavy skillet. Remove the chicken and set aside.
- Add enough olive oil to the pan to give you approximately 3 tablespoons of fat.
- Whisk in the flour and cook until the roux reaches a medium brown.
- Gradually whisk in chicken stock, then add onion, garlic and seasonings.
- Return the chicken to the pan and simmer until tender and cooked through.
- Serve over rice, mashed potatoes or whatever happens to be getting dinner on the table that night.
