Dill & Beet Hummus

I N G R E D I E N T S :
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 medium-sized beets, cooked and peeled
- 3 cloves garlic, minced
- 1/4 cup tahini
- 1/4 cup freshly squeezed lemon juice
- 1/3 cup Rocky Mountain Olive Oil Dill Infused Olive Oil + extra for drizzling
- 1 teaspoon ground cumin
- salt and black pepper, to taste
- water (as needed for desired consistency)

Prepare the Beets: If the beets are not already cooked, you can roast or boil them until tender. Once cooked, let them cool, then peel off the skin and chop them into chunks.

Blend Ingredients: In a food processor, combine the cooked beets, drained chickpeas, minced garlic, tahini, lemon juice, Dill Infused Olive Oil ground cumin, salt, and black pepper.

Blend Until Smooth: Process the ingredients until they are smooth and creamy. If the mixture is too thick, you can add a little water, 1 tablespoon at a time, until you reach your desired consistency.

Taste and Adjust: Taste the beet hummus and adjust the seasoning if needed, adding more salt, pepper, or lemon juice according to your preference.
