Pumpkin & Orange Granola

I N G R E D I E N T S :
- 3 cups old-fashioned rolled oats
- 1 cup pumpkin puree
- 1/2 cup Rocky Mountain Olive Oil Navel Orange Fused Olive Oil or Blood Orange Fused Olive Oil
- 1/4 cup honey or maple syrup
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup mixed nuts and seeds (such as almonds, pecans, and pumpkin seeds)
- 1/2 cup dried cranberries or raisins
I N S T R U C T I O N S :
- Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, pumpkin puree, Navel Orange Olive Oil, honey or maple syrup, cinnamon, nutmeg, and salt. Mix until well combined.
- Spread the mixture evenly onto the prepared baking sheet.
- Bake for 25-30 minutes, stirring occasionally, until the granola is golden brown and crisp.
- Remove from the oven and let it cool completely. Stir in the mixed nuts, seeds, and dried cranberries or raisins.
- Store in an airtight container at room temperature for up to two weeks.
