I N G R E D I E N T S :

  • 3 cups old-fashioned rolled oats
  • 1 cup pumpkin puree
  • 1/2 cup Rocky Mountain Olive Oil Navel Orange Fused Olive Oil or Blood Orange Fused Olive Oil
  • 1/4 cup honey or maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup mixed nuts and seeds (such as almonds, pecans, and pumpkin seeds)
  • 1/2 cup dried cranberries or raisins

 

I N S T R U C T I O N S :

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, pumpkin puree, Navel Orange Olive Oil, honey or maple syrup, cinnamon, nutmeg, and salt. Mix until well combined.
  3. Spread the mixture evenly onto the prepared baking sheet.
  4. Bake for 25-30 minutes, stirring occasionally, until the granola is golden brown and crisp.
  5. Remove from the oven and let it cool completely. Stir in the mixed nuts, seeds, and dried cranberries or raisins.
  6. Store in an airtight container at room temperature for up to two weeks.
