Pumpkin & Spinach Salad

- Preheat your oven to 375°F (190°C). Toss the diced pumpkin with 1 tablespoon of Harissa Olive Oil, salt, and pepper. Roast in the oven for 20-25 minutes until tender.
- In a large salad bowl, combine the roasted pumpkin, spinach, goat cheese and pumpkin seeds.
- In a small bowl, whisk together the remaining Harissa Olive Oil, Pumpkin Spice Balsamic, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately as a side dish or light lunch.
