Kiwi Jam with a Strawberry Twist

1. Wash and scope out the insides of the kiwis. Chop the kiwi insides finely.
2. In a medium pot, combine the kiwis, granulated sugar, lemon juice, balsamic vinegar, and kosher salt.
3. Heat the mixture over medium high heat, stirring constantly with a heat-proof spatula. Once the jam begins to bubble slightly, reduce the heat down to medium low.
4. Cook for 10 – 15 minutes, stirring very frequently, until the jam is thick and viscous.
5. Once it is ready, remove the pot from the heat and transfer the jam to a heatproof container. Let it cool completely at room temperature before transferring into the fridge.
