  1. Cook the quinoa in vegetable broth according to the package instructions. Let it cool slightly.
  2. In a small bowl, whisk together the Cilantro & Onion Olive Oil, Lemongrass Mint Balsamic and minced garlic.
  3. In a large bowl, combine the cooked quinoa, chopped cilantro, green onions, and shredded carrots.
  4. Pour the dressing over the quinoa mixture and toss to combine. Season with salt and pepper to taste.
  5. Sprinkle with chopped roasted peanuts before serving, if desired.
