- Cook the quinoa in vegetable broth according to the package instructions. Let it cool slightly.
- In a small bowl, whisk together the Cilantro & Onion Olive Oil, Lemongrass Mint Balsamic and minced garlic.
- In a large bowl, combine the cooked quinoa, chopped cilantro, green onions, and shredded carrots.
- Pour the dressing over the quinoa mixture and toss to combine. Season with salt and pepper to taste.
- Sprinkle with chopped roasted peanuts before serving, if desired.
