I N G R E D I E N T S :

For the Cake:

  • 1 cup any Rocky Mountain Extra Virgin Olive Oil
  • 1 1/2 cups all-purpose flour or measure for measure gluten-free flour
  • 1 cup granulated sugar
  • 3 large eggs (at room temperature)
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup rainbow sprinkles (plus extra for decorating)

 

For the Balsamic Glaze:

 

I N S T R U C T I O N S :

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan for an elegant look.

  2. In a large bowl, whisk the eggs with the sugar until the mixture becomes light and frothy. Slowly drizzle in the Extra Virgin Olive Oil, mixing continuously. Stir in the vanilla extract, lemon zest, and milk.

  3. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Gently fold the dry ingredients into the wet until just combined.

  4. Fold in the rainbow sprinkles evenly throughout the batter.

  5. Pour the batter into your prepared pan and bake for about 30–35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.

  6. In a small saucepan, combine the Strawberry Balsamic and brown sugar. Bring to a simmer over medium heat, stirring occasionally. Allow it to reduce until it becomes a thick, syrupy glaze (about 8–10 minutes). Remove from heat and let cool.

  7. Once the cake has cooled, drizzle the balsamic glaze artfully over the top. For an extra festive touch, sprinkle a few extra rainbow sprinkles on top before serving.
