Cranberry Pear Balsamic & Sage Olive Oil Biscotti

- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, combine the sugar, Sage Olive Oil, and Cranberry Pear Balsamic, mixing until smooth.
- Add the eggs, one at a time, to the mixture, stirring well after each addition.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the dried cranberries and nuts, if using.
- On the prepared baking sheet, shape the dough into a long, slightly flattened log, about 10-12 inches in length and 2-3 inches wide.
- Bake for 25-30 minutes, or until the log is firm to the touch and lightly golden.
- Remove from the oven and allow to cool for 10 minutes. Reduce the oven temperature to 300°F (150°C).
- Once slightly cooled, use a serrated knife to slice the log into ½-inch thick biscotti pieces.
- Arrange the biscotti cut-side down on the baking sheet and bake for another 10-12 minutes on each side, until dry and crispy.
- Let cool completely on a wire rack.
