Milanese Gremolata Brussels Sprouts Salad
Looking for the perfect potluck salad? This is it! Hearty and easy to prep, this salad stays crunchy and fresh even when dressed ahead of time.
INGREDIENTS:
- 1 lb. brussels sprouts
- 1/4 medium red onion
- 1/4 cup Rocky Mountain Olive Oil Milanese Gremolata Infused Olive Oil
- 1 lemon, juiced
- 1 teaspoon dijon mustard
- 1 1/2 teaspoon of maple syrup
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup dried cranberries
- 1/2 cup crumbled goat cheese
- 1/2 cup toasted pecans
DIRECTIONS:
Clean and trim the brussels sprouts, then slice them in half lengthwise and thinly slice each half. Halve and thinly slice the onion.
In a large bowl, whisk together the olive oil, lemon juice, mustard, maple syrup, paprika and salt and pepper. Taste and adjust seasoning to taste.
Add the sliced brussels sprouts to the bowl and toss until coated with the dressing. Add in the onion, cranberries, goat cheese and pecans then toss again to ensure the ingredients are evenly distributed.
Serve immediate or store in the fridge until ready to dive in!
