Jalapeno Balsamic Topped Crackers

- 12 non-flavored crackers of choice
- 1/4 cup spreadable soft cheese
- 12 mango slices
- 1/2 lime zest
- juice of 1/2 a lime
- 1/2 cup Rocky Mountain Olive Oil Jalapeño White Balsamic Vinegar
In a sauce pan, add the Jalapeno White Balsamic Vinegar and bring to a simmer. Let balsamic simmer until it reduces by about 1/3 (about 8 - 12 mins).
Remove the balsamic from the heat and let cool.
Spread the softened cheese on top of the crackers. Top each cracker with a mango slice and a bit of lime zest. Just before serving lightly drizzle lime juice and balsamic glaze over the crackers.
