I N G R E D I E N T S: 

  • 3/4 cup any Rocky Mountain Extra Virgin Olive Oil or Walnut Oil
  • 1 1/2 cups all-purpose flour or measure for measure gluten-free flour
  • 1 cup brown sugar
  • 3 large eggs
  • 1/2 cup apple puree (unsweetened)
  • 2 apples, peeled and diced
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts

 

I N S T R U C T I O N S :

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round pan.
  2. In a skillet, lightly sauté the diced apples with a sprinkle of cinnamon and a touch of sugar until just softened and caramelized. Set aside.
  3. In a large bowl, beat eggs and brown sugar until smooth. Slowly incorporate the Extra Virgin Olive Oil or Walnut Oil then mix in the apple puree and vanilla extract.
  4. Combine flour, baking powder, salt, and remaining spices; gently fold into the wet mixture along with the caramelized apples, and walnuts.
  5. Pour into the prepared pan and bake for 40–45 minutes or until a toothpick comes out clean.
  6. Allow to cool before serving.
