Caramelized Apple Olive Oil Spice Cake

I N G R E D I E N T S:
- 3/4 cup any Rocky Mountain Extra Virgin Olive Oil or Walnut Oil
- 1 1/2 cups all-purpose flour or measure for measure gluten-free flour
- 1 cup brown sugar
- 3 large eggs
- 1/2 cup apple puree (unsweetened)
- 2 apples, peeled and diced
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts
I N S T R U C T I O N S :
- Preheat oven to 350°F (175°C). Grease a 9-inch round pan.
- In a skillet, lightly sauté the diced apples with a sprinkle of cinnamon and a touch of sugar until just softened and caramelized. Set aside.
- In a large bowl, beat eggs and brown sugar until smooth. Slowly incorporate the Extra Virgin Olive Oil or Walnut Oil then mix in the apple puree and vanilla extract.
- Combine flour, baking powder, salt, and remaining spices; gently fold into the wet mixture along with the caramelized apples, and walnuts.
- Pour into the prepared pan and bake for 40–45 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
