Feta Pumpkin Dip with Basil Olive Oil
The perfect dish to bring to holiday potlucks or make ahead for a tasty appetizer! Pumpkin, feta, and spices come together for a delicious, comforting dip with a hit of freshness from bright Basil Olive Oil.
I N G R E D I E N T S :
- 2 cloves of garlic
- 1 teaspoon fresh thyme
- 8 oz feta cheese
- 1 cup pumpkin puree
- ½ cup plain Greek yogurt
- 2 Tablespoon Rocky Mountain Olive Oil Company Basil Olive Oil plus more for garnish
- ½ lemon, juiced
- ¼ teaspoon salt
- ¼ teaspoon freshly cracked black pepper
- Small handful of toasted pepitas, for garnish
- Crackers or veggies, for serving
I N S T R U C T I O N S :
- Mince the garlic and prep the thyme.
- Add the garlic and thyme to a food processor along with the feta, pumpkin, garlic, olive oil, lemon juice, salt and pepper.
- Blend until smooth.
- Transfer the dip into a serving bowl. Drizzle with additional olive oil and sprinkle with pepitas. Serve with crackers and veggies.
