Barbecue Baked Tofu
This is a great go to recipe for quick delicious vegetarian protein to add to meals! You can make the tofu ahead of time and toss it on top of salads, rice & veggies or whatever else during the week. Sure to win over even the biggest meat lover!

- 1 14 oz. package of extra-firm tofu
- 1/3 cup of favorite bbq sauce. Make sure it's sans gluten if making this gluten free.
- 3 tablespoons of Rocky Mountain Olive Oil Neapolitan Herb Dark Balsamic Vinegar
- 1 tablespoon of Rocky Mountain Olive Oil Garlic Infused Olive Oil
Press tofu for 30 mins. This is a very important step and you can learn more about how to do it at Oh My Veggies.
Cut tofu into 1/2 inch thick slices, then quarter each slice. Pour Neapolitan Herb Dark Balsamic Vinegar and bbq sauce into an 8" square baking dish or zipbloc ba). Place tofu in dish and toss gently to coat. Let the tofu marinate in sauce for at least 1 hour, turning occasionally.
Preheat the oven to 400 degrees. Use Garlic Infused Olive Oil to coat baking sheet. Place tofu on baking sheet and bake for 20 mins. After 20 mins, turn tofu over and brush with additional barbecue sauce. Bake 20 mins more or until tofu is brown on edges. Toss tofu in remaining barbecue sauce and enjoy.
