Watermelon Herb Salad
We all have those special dishes that are sure to impress at potlucks and family get-togethers. Dishes we know will lead to people asking, “how did you make this!?” and “you have to give me this recipe!”. This is one of those. Easy to make for a crowd and packed with fresh herbs and fruit – it’s a summertime salad for everyone.

- Prep the watermelon, cucumber, mint and basil.
- In a large bowl, add the cucumber, watermelon and cheese. Add in the mint and basil then mix with a large spoon to combine.
- Drizzle on the olive oil, balsamic vinegar, salt and pepper. Mix again to combine. Taste and adjust seasoning as needed.
- Serve immediately or chill overnight to let the flavors marinate.
