Dishes we know will lead to people asking, “how did you make this!?” and “you have to give me this recipe!”. This is one of those. Easy to make for a crowd and packed with fresh herbs and fruit – it’s a summertime salad for everyone.

I N S T R U C T I O N S  : 

  1. Prep the watermelon, cucumber, mint and basil.
  2. In a large bowl, add the cucumber, watermelon and cheese. Add in the mint and basil then mix with a large spoon to combine.
  3. Drizzle on the olive oil, balsamic vinegar, salt and pepper. Mix again to combine. Taste and adjust seasoning as needed.
  4. Serve immediately or chill overnight to let the flavors marinate.
