Neapolitan BLT Sandwich
- 8 bacon strips, cut in half
- ½ cup of mayonnaise (Want to make our own? Try this recipe).
- 1 Tablespoon Rocky Mountain Olive Oil Neapolitan Herb Dark Balsamic Vinegar
- ½ teaspoon pepper
- 1/8 teaspoon salt
- 8 slices bread
- 2 cups spring mix salad greens
- 8 cherry tomatoes
- 1 medium ripe avocado
In a large skillet, cook the bacon over medium heat until crisp. While the bacon cooks, wash greens and tomatoes. Slice the tomatoes and peel and slice the avocado. Toast your bread. When the bacon is done cooking, remove it to paper towels to drain.
In a small bowl, mix the mayo, vinegar salt and pepper. Spread half of the mixture over four of the toasted bread slices.
Layer with the bacon, salad greens tomatoes and avocado. Spread remaining mayo over the remaining bread slices and place over the top.
Makes 4 sandwiches.
