Buffalo Hot Wing Baked Tofu
- 14-16 oz extra-firm tofu
- 2 Tablespoons Rocky Mountain Olive Oil Buffalo Hot Wing Rub
- 1 ½ Tablespoons Rocky Mountain Olive Oil Extra Virgin Olive Oil
- ¼ cup of your favorite barbecue sauce
Preheat the oven to 425. While the oven is preheating, drain the tofu and press it. If you do not have a tofu press, you can wrap the block of tofu in a few layers of paper towels, then set it on a dinner plate and weigh it down with a pot or large can.
In a medium bowl, add in the Buffalo Hot Wing Rub and olive oil. Whisk together until well combined. Add in the tofu and stir gently until evenly coated. Place the tofu in a single layer on a foil lined and greased baking sheet.
Roast the tofu, stirring every 10 minutes until tofu is crisp all over – 30 to 35 minutes total. When the tofu is done, drizzle with barbecue sauce and toss to combine before serving.
