Whipped Ricotta Dip
- 1 cup ricotta
- 1 Tablespoon Rocky Mountain Olive Oil Extra Virgin Olive Oil
- 1 ½ Tablespoons fresh herbs of choice (basic, mint, thyme, chives)
- 1 clove garlic, minced
- ½ teaspoon Rocky Mountain Olive Oil Aged Balsamic Salt
- ¼ teaspoon freshly ground black pepper
In a medium bowl, add the ricotta, olive oil, herbs, minced garlic, salt and pepper. Beat the mixture with a hand mixer on medium speed until it is smooth and creamy – about 1 minute. Taste the mix and adjust seasoning as needed.
Transfer the mixture into a serving bowl and drizzle with additional olive oil if desired. Enjoy the dip with slices of toasted bread, veggies or crackers!
