Grapefruit Avocado Quinoa Salad

- 4 cups spinach/greens
- 1/2 cup of cooked quinoa
- 1 grapefruit
- 1 avocado
- 1/4 cup feta cheese
- 6 tablespoons Rocky Mountain Persian Lime Infused Olive Oil
- 2 tablespoons Rocky Mountain Olive Oil Serrano Honey Specialty Vinegar
- salt and pepper to taste
Wash spinach well, peel and section grapefruit, then slice the avocado. Combine spinach, grapefruit and avocado in a large bowl, then add feta cheese.
Whisk the olive oil & vinegar together (or shake well in a jar) until combined. Toss dressing with salad, and top with salt and pepper to taste. Enjoy!
