Lemon Sea Salt Sundaes

- 1 pint of high quality vanilla ice cream
- 2 tablespoons of Rocky Mountain Olive Oil Chiquitita Mild Extra Virgin Olive Oil
- Zest from 1 lemon
- 1/4 teaspoon of coarse, flakey sea salt
Place one scoop of ice cream in the bottom of a jar or bowl. Flatten the ice cream slightly with the back of a spoon. Drizzle 1/2 teaspoon of olive oil on top. Add a few pinches of lemon zest and a tiny pinch of salt. Repeat layers 1 - 2 more times. Serve immediately, and enjoy this refreshing, unusual, gluten-free dessert!
