  • I N G R E D I E N T S :

    • 1 can (15 oz) chickpeas, drained and rinsed
    • 1 cup pumpkin puree
    • 2 cloves garlic, minced
    • 2 tbsp tahini
    • 2 tbsp lemon juice
    • 1/4 cup Rocky Mountain Olive Oil Cayenne Fused Olive Oil
    • 1/2 tsp ground cumin
    • 1/2 tsp paprika
    • salt and pepper to taste

  • I N S T R U C T I O N S :
    1. In a food processor, combine chickpeas, pumpkin puree, minced garlic, tahini, lemon juice, olive oil, ground cumin, paprika, salt, and pepper.
    2. Blend until smooth and creamy, adding more olive oil if necessary to achieve desired consistency.
    3. Transfer the pumpkin hummus to a serving bowl and drizzle with olive oil to create a spooky web-like pattern.
