Lemon Pepper Garlic French Fries

- Wash and peel the potatoes. Then cut (aka French) the potatoes into uniform sticks. This can be done by hand or by using a French fry cutter.
- Soak the fries in a large bowl of cold water for at least 30 minutes. Preheat the oven to 375 degrees F while the fries soak.
- After 30 minutes, remove the fries from the water and pat them very dry – or, for faster drying, spin them in a salad spinner to remove any water.
- Toss the fries in the Garlic Infused Olive Oil and Lemon Pepper Seasoning. Spread them evenly in a single layer on a parchment-lined pan.
- Bake the fries for 20 minutes. Then, turn the oven up to 425 and cook fries until golden, about 20-25 minutes more (longer for thicker cut fries).
