Gingerbread Cake with Butter Olive Oil
- 1 C. Boiling water
- ½ C. Butter, room temperature
- 3/8 c. Rocky Mountain Olive Oil Butter Infused Olive Oil
- 1 C. Brown sugar
- 1 C. Molasses, maple syrup or honey
- 3 eggs
- 2 ½ C. flour or King Arthur Measure for Measure Gluten-free Flour to make it gluten-free
- 1 ts. Salt
- 1 ½ ts. Baking soda
- 1 ts. Cinnamon
- 1 ts. Powdered ginger
- 1 ts. Allspice
Pour boiling water over butter, oil, sugar and syrup. Stir until melted. Cool slightly and add eggs; combine well.
Sift dry ingredients. Add butter and oil mixture to dry ingredients and mix until smooth.
Pour into buttered 13x9 pan and bake at 325 for 45-60 min. Cool and enjoy! We suggest drizzling the bread with your favorite sweet dark balsamic, like maple, vanilla, or dark chocolate.
